Big Batch Spaghetti Bolognaise

This is just one portion of my Big Batch Spaghetti Bolognaise. This batch makes 12 single portions, ready to be frozen for another day. 

When you are trying to save time cooking weeknight meals this is ideal, all you need to do is heat it and cook some spaghetti. If you fancy it you could also have some garlic bread as well.

It is also great as an easy low mess option for those large family get-togethers.

Serves 12

Ingredients

For Frying:

  • 4 tbsp Olive Oil / Vegetable Oil

Meat:

  • 1.5 kg Beef Mince (alternatively use half beef mince and half pork mince)
  • 150g Cheap Smoked Cooking Bacon

Vegetables:

  • 4 Medium Onions (chopped small)
  • 3 Medium Carrots (chopped small)
  • 3 Celery Sticks (finely chopped)
  • 500 g Mushrooms (thinly sliced)

Seasoning and Sauce:

  • 8 Fresh Garlic Cloves (crushed)
  • 2 tbsp dried mixed herbs
  • 2 Bay Leaves
  • 6 x 400 g Tins Chopped Tomatoes
  • 6 tbsp Tomato Puree
  • Large Glass of Red Wine (optional)
  • 4 tbsp Red Wine Vinegar
  • 1 tbsp Sugar

To Serve

  • Long Spaghetti – Cooked
  • Grated Parmesan Cheese

Method

  1. In a very large stew pot, heat the oil and add the Bacon, Onions, Carrots and Celery. Gently fry off until golden and tender. Should take about 20 mins.
  2. Meanwhile, using a large frying pan, fry of the Beef Mince until browned. You may need to do this in batches. Set aside the batches until the vegetables are ready.
  3. Once the vegetables are ready, add the Garlic, Bay Leaves, Herbs and Mushrooms and continue to cook for another couple of minutes.
  4. Add the cooked Mince, Tin Tomatoes and Tomato Puree and stir well. Rinse the Tomato Tins with your wine then pour the wine into the mix.
  5. Season well with salt and pepper and stir well.
  6. Leave to simmer uncovered for about an hour, until the sauce has thickened and the meat is tender. 
  7. If eating immediately – serve with Long Spaghetti and Parmesan Cheese.

Freezing Your Big Batch Spaghetti Bolognaise

  1. Once you Big Batch Spaghetti Bolognaise is cooled you can divide it into twelve freezer safe containers.
  2. Make sure it is completely cold before you put the lid on.
