I’ve never really been one to eat a lot of omelettes, certainly not a baked crab omelette. yet, just lately I have come across some really good recipes.
In addition, to the vast variety of omelettes you can make. You can also vary the way in which you make them, I always thought of omelettes being fried in the pan.
Hense, I will be making a lot more in the near future. But, for today her is one for you to try.
Baked Crab Omelette
This delicious oven baked crab omelette is not something I personally would have thought about doing.
This is one on my son’s creations for his no carb diet.
However, it is packed with goodness and he tells me it was delicious.
Firstly you will want to lightly steam some carrot sticks and spinach, as these will take longer to cook than the rest.
Using the olive oil, grease the inside of an ovenproof dish.
Once the carrots and spinach are ready, lay the spinach in the bottom of an oven proof dish.
Next, add your layer of carrots.
Spread out the crab meat on top of the carrots.
Sprinkle on some spring onion
A layer of chopped red pepper.
Almost there, now top off with some hot green chili pepper – just to give it a kick.
Finally, carefully pour over your egg mix – (can’t leave out the eggs or it just wouldn’t be an omelette,
and bake in the oven till done.
And so – on to the recipe – Baked Crab Omelette
Cooking time is about 30 minutes if you stick to the portion size below. However, it may vary depending on your oven.
Ingredients – For this recipe, you will need:
- 213g tin of Crab meat in brine
- 80g Spinach
- Medium Carrot
- 2 Spring Onions
- 1/4 of a Red Pepper
- 1 small Green Chilli Pepper
- 3 medium Eggs
- A dash of Milk
- Salt & Pepper to taste
- Heaped tsp of grated Horse Raddish
- Tsp Olive Oil
You want to start by lightly steaming your spinach and carrots.
Once these are done you can start layering together the ingredients.
Firstly turn your oven on to gas mark 6 and grease an oven proof dish with the olive oil.
While your oven is warming up and your vegetables are steaming, whisk your eggs and milk together and add seasoning to taste.
Next layer all of your ingredients in this order:
- Spinach – lightly steamed
- Carrots – cut into sticks and lightly steamed
- Crab – make sure this is well drained or you will end up with a soggy omelette.
- Spring Onion chopped
- Red Pepper – chopped
- Hot Green Chili Pepper – chopped (optional)
Carefully pour over the top of your other ingredients and sprinkle over the horseradish.
Then, bake in the oven for around 30-40 minutes, till golden brown on top and the middle is all cooked.
Serve immediately and enjoy.
Due to the nature of this recipe, seriously – no – absolutely not. This is definitely a recipe best cooked fresh.
So, whilst this recipe is delicious as it is, apart from the egg and milk, you can change the ingredients to your particular liking.
Try adding some grated cheese on top for another interesting tip.
Another idea is to use a different type fish.
